This lunch came on a sunny but hungover day, I was in need of health after a day of drinking the day not much eating the day before.

I set myself up in a sunny spot in the garden.

You need:
5 spears asparagus
1/2 buffalo ball mozzarella
5 new potatoes
2 slices prosciutto
handful salad
olive oil
balsamic reduction
sea salt and cracked black pepper

I don’t think I need to give you instructions for this! Steam your asparagus for 3 minutes at most, to keep it crunchy and tasty.

Get the best new potatoes and mozzarella you can, you’ll be surprised at the difference.

Yum, my new favourite… I ate it for lunch the next day as well!
