5 Minute Lunch/Snack

One of my favourite lunches is homemade mackerel pate with some nice bread, here is my easy and quick recipe;

1 pack smoked mackerel fillets
1/2 tub creme fraiche (or sour cream, yogurt etc)
1 lemon (juice and zest)
2/3 tsps horseradish cream
handful fresh chives
seat salt and black pepper

1. Mash the mackerel into chunks and add the creme fraiche and mix well, then add the lemon juice and zest and the horseradish to taste, finally mix in the chives and add salt and pepper to taste.

That’s it!

To make a more substantial lunch make a chunky sandwich with some thick cut granary bread, drizzle with olive oil, add some baby herby leaves or rocket, some tomatoes and cucumber or whatever salad you prefer, to have a light lunch spread on crackers or dip bread sticks or vegetable crudities (asparagus is yummy with this!)
