Smashed Rosemary Potatoes

I love potatoes, in all forms.

At the moment I am enjoying the season of those lovely new potatoes. However the Boy is not so keen on plain steamed potatoes (he is a funny one) so I am trying to find ways to make them more interesting. This is one way that went down well and is almost as easy as steaming.

You need;
as many new potatoes as you want
fresh rosemary, 3 sprigs, chopped
sea salt and black pepper
olive oil

1. boil or steam your new potatoes for 5-6 minutes, get them just over half-cooked.

2. heat some olive oil in a griddle pan and chuck in the chopped rosemary until the scent gets going then literally throw in your potatoes and smash them about a bit, this is how you’ll get the nice crispy bits!

I served them with some steamed asparagus and pan-fried pork loin, delicious!

I could eat that right now.
