Kale and Potato Cakes…

This was supposed to be a quick and easy dinner, but I ended up using quite a few saucepans, mostly becuase this wasn’t made from leftover mash and kale, I started from scratch, big mistake!

You need;
for 2 people
300-400g buttery potatoes, boiled
olive oil
warm milk
black pepper
salt
2 good handfuls of pan fried kale (with garlic for 3-4 minutes)

So make your mash, the warm milk makes it extra creamy, and leave the skins on too they’re so tasy and full of goodness…

Then make into cakes and fry in a griddle pan for 5-6 minutes…

I served this with smoked haddock poached in milk, and a poached egg

I did plan on making a light sauce, with mustard but decided that was excessive so dolloped some mustard on top and drizzled the fish with a little of the poaching milk and let the egg do the work…

    Cor blimey, this looks awesome! My hubby does a similar potato cake, but baked in the over with some added dollops of butter (I don’t look at that bit!)
