Chocolate Cherry Brownies…

Last week I had a text from a neighbour saying they had more cherries on their tree than they could handle and did I want any… the day before a bake sale at work… this is the result!
I have never seen more perfect cherries…
I dug out my trusty Hummingbird Bakery Cookbook…
200g dark chocolate
roughly chopped 175g unsalted butter
325g caster sugar
130g plain flour
icing sugar, to decorate
and of course as many cherries as you like, I used roughly 150g
a 33 x 23 x 5cm baking tray, lined with greaseproof paper
Makes about 12 portions
Preheat the oven to 170C
Put the chocolate and butter in a heatproof bowl over a saucepan of simmering water (do not let the base of the bowl touch the water). Leave until melted and smooth.
Or, you could use the Nigella trick of just sticking it in the microwave, which I promise works just as well, is a lot less hassle and mess! (I put it in for 1min on full power but go careful until you find out how long the chocolate needs in your microwave)
Remove from the heat. Add the sugar and stir until well incorporated.
Add the flour and stir until well incorporated.
Finally, stir in the eggs and mix until thick and smooth.
This is when I added the cherries…
Spoon the mixture into the prepared baking tray and bake in the preheated oven for about 30-35 minutes, or until flaky on the top but still soft in the centre.
Be careful not to overcook otherwise the edges will become hard and crunchy. (Check after 20-25 minutes just to be sure, you want a gooey centre)
Leave to cool… if you can!
The cherries made it, they had become almost caramelised, and they sold out within half an hour at the bake sale, unfortunately before I had got there so I only got to have a small bite when cutting them up…
I think I will have to make some more at the weekend… especially since the givers of the cherries didn’t get one either… Thanks to Pete and Ania!
P.s. this is a very very easy recipe and hardly takes any time at all, make them… just make them when you can share them or you will end up eating a lot of brownie!
You could add anything you like to the mix, I have in the past added giant chocolate buttons, white chocolate chunks, walnuts, hazelnuts… send me your variations!
